  • 3 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard Can substitute with yellow mustard
  • 2 tablespoons chopped pickles For extra crunch, top with additional pickle bits
  • 1 tablespoon pickle juice Adds tang to the mixture
  • to taste Salt and pepper Adjust according to preference

Method
 

Preparation
  1. Slice the hard-boiled eggs in half and carefully remove the yolks.
  2. In a bowl, mash the yolks with mayonnaise, Dijon mustard, chopped pickles, pickle juice, salt, and pepper.
  3. Spoon or pipe the yolk mixture back into the egg white halves.
  4. Sprinkle with paprika before serving. Enjoy!

Notes

Make sure your eggs are boiled and cooled ahead of time. Store in an airtight container in the fridge for up to 3 days. Let sit at room temperature for an hour before serving. Try sriracha for a spicy twist or vegan mayo for a plant-based option.
