Ingredients
  

For the Chicken
  • 2 pieces chicken breasts Skinless and boneless
  • 1 cup fresh pineapple, diced Can substitute with canned if well-drained
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
For the Tacos
  • 8 small corn tortillas
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Lime wedges for serving

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, chili powder, cumin, salt, and pepper.
  3. Coat the chicken breasts with the spice mixture.
Cooking
  1. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  2. Remove from the grill and let it rest for a few minutes before slicing.
  3. Warm the tortillas on the grill for about 30 seconds on each side.
Assembly
  1. Assemble the tacos by placing sliced chicken, fresh pineapple, red onion, and cilantro on each tortilla.
  2. Serve with lime wedges on the side.

Notes

Letting the chicken rest before slicing keeps it tender. Marinate the chicken for an hour for deeper flavors. Consider using shrimp or tofu for variations, or switch pineapple with mango.
