- In a bowl, whisk together the Greek yogurt, pumpkin puree, milk, pumpkin pie spice, maple syrup or honey, and vanilla extract until smooth.
- Stir in the chia seeds until well combined.
- Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to expand and thicken the pudding.
- Serve chilled, topped with additional pumpkin spice or your favorite toppings.
Notes
This pudding can be stored in an airtight container in the fridge for up to 5 days. Consider adding a dollop of whipped cream or toppings such as granola or chocolate chips before serving.
