  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice Feel free to adjust to taste.
  • 2 tablespoons maple syrup or honey Optional; adjust to sweetness preference.
  • 1 teaspoon vanilla extract

Preparation
  1. In a bowl, whisk together the Greek yogurt, pumpkin puree, milk, pumpkin pie spice, maple syrup or honey, and vanilla extract until smooth.
  2. Stir in the chia seeds until well combined.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to expand and thicken the pudding.
  4. Serve chilled, topped with additional pumpkin spice or your favorite toppings.

Notes

This pudding can be stored in an airtight container in the fridge for up to 5 days. Consider adding a dollop of whipped cream or toppings such as granola or chocolate chips before serving.
