- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, whisk together the eggs and milk.
- Stir in the chopped spinach, feta cheese, salt, and pepper.
- If you’re feeling fancy, fold in any optional ingredients like bell peppers or onions.
- Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until the muffins are set and lightly golden on top.
- Allow to cool slightly before removing from the tin.
- Enjoy warm or store for later!
Notes
Use silicone muffin liners for easy removal and cleanup. They keep well in the fridge for up to 5 days and can be frozen for a quick breakfast option later on.
