Preparation
- Preheat your oven to 375°F.
- In a mixing bowl, add the dry ingredients: flour, baking soda, and cinnamon. Mix well and set aside.
- In a separate bowl, cream together the room-temperature butter and packed brown sugar. Add in the ripe bananas, eggs, and vanilla extract. Mash and blend until combined.
- Pour the dry ingredients into the wet mixture and gently mix until just combined; avoid over-mixing.
- Butter a 12-cup muffin pan and pour the batter equally into the muffin cups.
- Bang the pan on the counter to remove air bubbles.
- Bake in the oven for 20 minutes, checking doneness with a toothpick.
Notes
For extra fluffy muffins, let your batter rest for about 10 minutes before pouring it into the muffin cups. Makes a great warm treat or snack paired with honey or nut butter!
