Method
 

Preparation
  1. Slice the cucumbers and cherry tomatoes.
  2. Finely chop the red onion and fresh parsley.
  3. In a large bowl, combine the cucumbers, cherry tomatoes, red onion, and parsley.
Dressing
  1. In a separate bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  2. Pour the dressing over the salad and toss to combine.
Chill
  1. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For best flavor, let the salad sit for a couple of hours. Using a mandoline can help achieve perfectly thin cucumber slices. Try alternative vinegars like balsamic or apple cider for a twist. Feta or olives can be added for variations.
