  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 1 cup brown sugar
  • 4 large eggs Use room temperature for a smoother batter.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can be substituted for gluten-free flour.
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh cherries, pitted and halved Frozen cherries can be used after thawing.
  • 1/2 cup dark chocolate chips Add an extra 1/4 cup for more chocolatey flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a medium saucepan, melt the butter over low heat. Remove from heat and stir in both sugars until combined.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing just until combined.
  6. Fold in the cherries and dark chocolate chips.
Baking
  1. Pour the batter into the prepared baking pan and spread evenly.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  3. Allow to cool before cutting into squares and serving.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for about a week or freeze for up to a month.
