Ingredients

For the Miso Glaze
  • 3 tablespoons white miso paste
  • 2 tablespoons brown sugar
  • 2 teaspoons rice vinegar
  • 2 tablespoons softened butter
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon ground ginger (or 1 teaspoon freshly grated)
  • ¼ teaspoon black pepper
Main Ingredients
  • 1.5 pounds boneless skinless chicken thighs
  • Green onions, for serving (optional)

Method

Preparation
  1. Preheat the oven to 425°F.
  2. Line a large rimmed baking sheet with a silicone baking mat, parchment paper, or foil.
  3. In a small bowl, smash together the white miso paste, brown sugar, rice vinegar, softened butter, red pepper flakes, ground ginger, and black pepper with a fork.
  4. Use a paper towel to pat chicken thighs dry and trim any excess fat.
Cooking
  1. Place the chicken thighs on the baking sheet. Add a dollop of the miso mixture to each thigh and smoosh the mixture over them for an even coating.
  2. Bake for 25 minutes, until the miso caramelizes and darkens in color, spooning the melted miso butter back onto the chicken thighs occasionally.
  3. For stuck-on bits, add a splash of water, scrape them up, and brush onto the thighs for extra flavor.
Serving
  1. Serve hot with rice, noodles, Asian slaw, stir-fry, or steamed veggies.

Notes

For better flavor, marinate the chicken in the miso mixture for an hour or two. Pat the chicken dry for a crispier skin, and consider adding vegetables to the baking sheet in the last 10 minutes for a full one-pan meal.
