  • 2 medium Sweet potatoes Sliced into round discs
  • 2 tablespoons Olive oil For tossing the sweet potatoes
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For Topping
  • 2 tablespoons Honey Drizzled over the roasted sweet potatoes
  • 1/2 cup Feta cheese Crumbled

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into round discs.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper until well-coated.
  4. Arrange them on a baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for 20-25 minutes, flipping halfway, until golden and tender.
  2. Drizzle the roasted sweet potatoes with honey and sprinkle crumbled feta on top before serving.

Notes

For easier cleanup, consider using parchment paper on your baking sheet. Leftovers can be stored in an airtight container in the fridge for 3-5 days and reheated in the oven.
