Main Ingredients
  • 2 fillets salmon Fresh salmon fillets
  • 8 oz pasta (such as spaghetti or fettuccine) Any pasta works
  • 1 cup basil pesto Store-bought or homemade
  • 1 tablespoon olive oil For cooking salmon
  • to taste Salt For seasoning salmon
  • to taste Pepper For seasoning salmon
  • to serve Parmesan cheese Grated, for serving
  • optional Cherry tomatoes For garnish

Method
 

Preparation
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season the salmon fillets with salt and pepper.
Cooking
  1. In a skillet, heat the olive oil over medium heat and add the salmon fillets. Cook for about 4-5 minutes on each side, or until cooked through.
  2. Remove the salmon from the skillet and flake into large pieces.
  3. In the same skillet, add the cooked pasta and basil pesto. Toss to combine and heat through.
  4. Gently fold in the flaked salmon.
Serving
  1. Serve with grated Parmesan cheese and optional cherry tomatoes on top.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on medium heat, adding a splash of olive oil or water to keep moist.
