Preparation
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season the salmon fillets with salt and pepper.
Cooking
- In a skillet, heat the olive oil over medium heat and add the salmon fillets. Cook for about 4-5 minutes on each side, or until cooked through.
- Remove the salmon from the skillet and flake into large pieces.
- In the same skillet, add the cooked pasta and basil pesto. Toss to combine and heat through.
- Gently fold in the flaked salmon.
Serving
- Serve with grated Parmesan cheese and optional cherry tomatoes on top.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on medium heat, adding a splash of olive oil or water to keep moist.
