Ingredients
  

For the Mango Salsa
  • 2 pieces ripe mangoes, diced Fresh mango is a must! Ripe but firm mangoes yield the best salsa.
  • 1 piece red onion, finely chopped
  • 1 piece red bell pepper, diced
  • 1 piece jalapeño, minced Adjust for spice level.
  • 2 tablespoons juice of lime
  • Salt and pepper, to taste
  • 1/4 cup fresh cilantro, chopped Adds a fresh kick!
For the Salmon
  • 4 pieces salmon fillets Can use frozen salmon, just thaw properly.
  • Oil for searing Ensure the pan is hot for a crispy exterior.

Method
 

Prepare Mango Salsa
  1. In a bowl, combine the diced mangoes, red onion, red bell pepper, jalapeño, lime juice, and cilantro. Season with salt and pepper, then mix well.
Cook the Salmon
  1. Preheat a skillet over medium-high heat. Season the salmon fillets with salt and pepper.
  2. Add a bit of oil to the skillet and sear the salmon fillets for about 4-5 minutes on each side, until cooked through and golden brown.
Serve
  1. Serve the salmon warm, topped with the mango salsa.

Notes

Want leftovers? This salmon stores beautifully in an airtight container for up to 3 days. For longer storage, freeze the salmon (mango salsa is best fresh).
