  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon zest and juice
  • 1 cup chicken or vegetable broth
  • 1/2 cup heavy cream

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the shrimp and cook until pink, about 3-5 minutes.
  4. Stir in orzo and chicken broth; bring to a boil.
  5. Reduce heat and simmer for about 10 minutes until the orzo is tender.
  6. Stir in heavy cream, lemon zest, lemon juice, salt, and pepper.
  7. Cook for an additional 2 minutes, then remove from heat.
  8. Garnish with fresh parsley before serving.

Notes

Taste your sauce before serving; you might want to add a pinch of extra salt or lemon juice for that zing! Don’t skip the garlic—it’s your secret weapon for flavor! You can jazz it up by making it vegan with chickpeas or tofu instead of shrimp.
