- In a pot of boiling salted water, cook the shrimp until they turn pink, about 2-3 minutes. Drain and let cool.
- In a bowl, mix together the mayonnaise, lemon juice, Dijon mustard, salt, pepper, and fresh dill or parsley.
- Chop the cooked shrimp into bite-sized pieces and add to the dressing. Stir to combine.
- Split the butter rolls and, if desired, place a lettuce leaf inside each.
- Spoon the shrimp mixture into the rolls.
- Serve immediately and enjoy your delicious shrimp rolls!
