Ingredients

Main Ingredients
  • 2 pieces boneless, skinless chicken breasts
  • 1 cup Caesar dressing
  • 2 cups romaine lettuce, chopped
  • 1/2 cup grated parmesan cheese
  • 8 pieces small tortillas
  • to taste Salt and pepper

Method

Cooking the Chicken
  1. Season the chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and cook the chicken until fully cooked, about 6-7 minutes per side.
  3. Remove from heat and let cool slightly, then smash the chicken with a fork.
Assembling the Tacos
  1. In a bowl, toss the smashed chicken with Caesar dressing until well coated.
  2. Warm the tortillas in a dry skillet or microwave.
  3. Assemble the tacos by placing the chicken mixture on each tortilla, and topping with chopped romaine and grated parmesan cheese.
  4. Fold the tortillas in half and serve.

Notes

For best results, warm up the tortillas before filling to make them easier to fold. Serve on a bright-colored platter for a fun presentation, and optionally add a squeeze of fresh lemon for added flavor.
