Preparation
- In a large bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until foamy.
- Stir in flour and salt until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
- Let the dough rise in a greased bowl covered with a towel for about 1 hour or until doubled in size.
Cooking
- Preheat oven to 450°F (232°C) and line a baking sheet with parchment paper.
- In a large pot, bring 10 cups of water and baking soda to a boil.
- Punch down the dough and divide it into small pieces. Roll each piece into a rope and cut into bite-sized pieces.
- Boil the pretzel bites in batches for 30 seconds, then remove with a slotted spoon and place on the baking sheet.
- Beat the egg and brush the mixture over the pretzel bites, then sprinkle with coarse salt.
- Bake for 12-15 minutes or until golden brown.
