  • 6 large large eggs For boiling
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Gochujang sauce For a spicy kick
  • Salt and pepper To taste
  • Chives or green onions For garnish

Method
 

Preparation
  1. Boil the eggs in a pot of water for about 10-12 minutes.
  2. Remove the eggs and place them in ice water to cool.
  3. Once cooled, peel the eggs and slice them in half.
  4. Remove the yolks and place them in a bowl.
  5. Add mayonnaise, Dijon mustard, Gochujang sauce, salt, and pepper to the yolks and mix until smooth.
  6. Spoon or pipe the mixture back into the egg whites.
  7. Garnish with chopped chives or green onions.
  8. Serve chilled.

Notes

These deviled eggs hang out in the fridge for about 2-3 days. Cover them tightly with plastic wrap to keep them fresh. They do not freeze well. For creamier filling, add a splash of milk or cream. Avoid overcooking your eggs to prevent green yolks and consider swapping Gochujang for a smoky chipotle sauce for a spicy kick.
