- Slice the hard-boiled eggs in half and remove the yolks.
- In a bowl, mash the yolks with gochujang, mayonnaise, sesame oil, minced garlic, salt, and pepper until smooth.
- Fill the egg whites with the yolk mixture.
- Garnish with sesame seeds and sliced scallions.
- Serve immediately or refrigerate until ready to serve.
Notes
These eggs can be stored in an airtight container in the fridge for about 2 days. For a make-ahead option, assemble everything except the filling a day in advance.
