Method

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onions and sauté until they’re translucent—about 5 minutes.
Cooking
  1. Toss in the ground beef and cook until browned, stirring to break it up.
  2. Add the diced poblano peppers and cook for an additional 5 minutes.
  3. Stir in the potatoes, beef broth, diced tomatoes (with juice), salt, garlic powder, cumin, oregano, and black pepper.
  4. Bring the mixture to a boil and then reduce to a simmer. Let it cook until the potatoes are tender, about 20-25 minutes.

  2. Once the soup is ready, serve hot and top with Greek yogurt, cotija cheese, fresh cilantro, and those crunchy tortilla strips.

Notes

You can keep this deliciousness in your fridge for up to 4 days. If you’re feeling extra spicy, freeze it and enjoy it for up to 3 months. Reheat just by popping it in the microwave or on the stove until warmed through, adding a splash of broth if it thickens up too much. Tips include chopping veggies in advance, adding extra veggies or spicing it up with jalapeños or a splash of hot sauce, and stirring in some heavy cream for richness.
