  • 1 cup spinach, cooked and chopped Fresh spinach can also be used.
  • 1 cup feta cheese, crumbled Substitute with goat cheese if desired.
  • 1 package (8 oz) cream cheese, softened For a vegan option, use cashew cream.
  • 1 package (10 oz) flour tortillas Can also substitute with rice paper wraps or large lettuce leaves.
  • 1/4 cup chopped fresh herbs Optional but recommended for added flavor.
  • to taste Salt and pepper Adjust seasoning to your preference.

Method
 

Preparation
  1. In a bowl, combine the chopped spinach, feta cheese, and cream cheese. Stir until well mixed. Add herbs, salt, and pepper if desired.
  2. Spread the mixture evenly over each tortilla.
  3. Roll the tortillas tightly and slice them into pinwheels.
  4. Arrange the pinwheels on a platter and serve immediately or refrigerate until ready to serve.

Notes

Perfect for making ahead of time; store in the fridge for 3-4 days or freeze for a quick snack later. Use a sharp knife for clean cuts while slicing.
