  • 1 pie crust 1 pie crust Store-bought or homemade
  • 1 cup 1 cup fresh spinach, chopped Chopped finely for even distribution
  • 1 cup 1 cup ricotta cheese Can substitute with cottage cheese
  • 3 large 3 eggs Well-whisked
  • 1/2 cup 1/2 cup milk
  • 1/2 cup 1/2 cup grated Parmesan cheese
  • to taste Salt and pepper to taste
  • optional Nutmeg (optional) Add a pinch for extra flavor

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and milk until frothy.
  3. Add the ricotta cheese, chopped spinach, Parmesan cheese, salt, pepper, and a pinch of nutmeg if desired. Stir until well blended.
  4. Place the pie crust in a pie pan and pour the spinach and cheese mixture into the crust.
Baking
  1. Bake for 30-35 minutes or until the quiche is set and the top is lightly golden.
  2. Allow to cool slightly before slicing and serving.

Notes

Leftovers can be stored in the fridge for 3-4 days or frozen for up to 2 months. Reheat in the oven or microwave.
