  • 1 lb Ground Beef or Turkey Use your preference for a lighter option.
  • 2 cups Fresh Spinach Chopped, can substitute with frozen spinach if needed.
  • 4 cloves Garlic Minced or chopped.
  • 1 small Onion (optional) Can be omitted for a milder flavor.
  • 1 large Egg Acts as a binder for the meatballs.
  • 1 cup Breadcrumbs Use regular or panko for texture.
  • 1/2 cup Grated Parmesan Cheese Adds flavor to the meatballs.
  • 8 oz Low-Moisture Mozzarella Cubes For filling inside the meatballs.
  • 1 tbsp Italian Seasoning Or substitute fresh herbs.
  • to taste Salt Adjust based on personal preference.
  • to taste Pepper Adjust based on personal preference.
  • 1/2 tsp Red Pepper Flakes Add for heat, optional.
  • 1 tbsp Chopped Parsley For garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Sauté the spinach and minced garlic until fragrant and wilted, then let it cool.
  3. In a mixing bowl, combine the ground beef or turkey, sautéed spinach and garlic, onion, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes. Mix until well combined.
  4. Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
  5. Tuck a mozzarella cube inside each meatball.
  6. Bake for 25-30 minutes until cooked through and golden brown.
  7. Garnish with chopped parsley before serving.

Notes

Serve these meatballs over pasta, in subs, or with garlic bread. They can be stored in the fridge for up to 4 days or frozen for 3 months. For variations, consider using different ground meats or cheeses.
