Preparation
- Preheat the oven to 400°F (200°C).
- Sauté the spinach and minced garlic until fragrant and wilted, then let it cool.
- In a mixing bowl, combine the ground beef or turkey, sautéed spinach and garlic, onion, egg, breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes. Mix until well combined.
- Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.
- Tuck a mozzarella cube inside each meatball.
- Bake for 25-30 minutes until cooked through and golden brown.
- Garnish with chopped parsley before serving.
Notes
Serve these meatballs over pasta, in subs, or with garlic bread. They can be stored in the fridge for up to 4 days or frozen for 3 months. For variations, consider using different ground meats or cheeses.
