Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and spinach, cooking until the spinach is wilted.
- In a bowl, combine cooked spinach, cream cheese, Parmesan cheese, breadcrumbs, salt, and pepper. Mix well.
- Slice a pocket into each salmon fillet and stuff with the spinach mixture.
Cooking
- Place stuffed salmon fillets on a baking dish and bake for 20-25 minutes, or until salmon is cooked through.
- Serve with lemon wedges.
Notes
Prep the stuffing ahead of time to save time. For a kick, add red pepper flakes. Swap spinach with kale or Swiss chard for a different twist. Always serve with lemon wedges for added brightness.
