  • 4 pieces salmon fillets
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and spinach, cooking until the spinach is wilted.
  3. In a bowl, combine cooked spinach, cream cheese, Parmesan cheese, breadcrumbs, salt, and pepper. Mix well.
  4. Slice a pocket into each salmon fillet and stuff with the spinach mixture.
Cooking
  1. Place stuffed salmon fillets on a baking dish and bake for 20-25 minutes, or until salmon is cooked through.
  2. Serve with lemon wedges.

Notes

Prep the stuffing ahead of time to save time. For a kick, add red pepper flakes. Swap spinach with kale or Swiss chard for a different twist. Always serve with lemon wedges for added brightness.
