  • 4 cups Fresh spinach leaves
  • 1 cup Cherry tomatoes, halved
  • 1 medium Cucumber, diced
  • 1/2 medium Red onion, thinly sliced
  • 1/2 cup Feta cheese, crumbled
Dressing and Seasoning
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, toss together the spinach, cherry tomatoes, cucumber, and red onion.
  2. Drizzle with olive oil and lemon juice.
  3. Sprinkle in the feta cheese, then season with salt and pepper.
  4. Mix gently to combine all ingredients—and voila!
  5. Let the salad sit for a few minutes before serving to allow the flavors to meld.

Notes

To serve, garnish with extra feta crumbs. Great with crackers, grilled chicken, or fish. For added crunch, include nuts or substitute feta with vegan cheese.
