Preparation
- Preheat your oven to 375°F (190°C).
- Mix together the flour, brown sugar, and baking powder. Add in the melted butter, egg, and vanilla. Mix with a crumbling motion.
- Beat together the cream cheese, vanilla, powdered sugar, and egg with a hand mixer until smooth.
- Combine diced strawberries, lemon juice, lemon zest, white sugar, and cornstarch in a bowl.
Layering and Baking
- Press half of the crumb mixture into an 8x8 pan lined with parchment paper.
- Spread on the cheesecake filling, followed by the strawberry mixture, and top with the remaining crumb mixture.
- Bake for 40-45 minutes, until golden brown. Let sit for at least 30 minutes to set, then serve.
Notes
Serve chilled for best flavor. Drizzle with melted chocolate or sprinkle with powdered sugar for extra flair. Store in the fridge for 3-5 days or freeze for up to 3 months.
