Ingredients
  

For the crumb mixture
  • 2 cups flour
  • 1/2 cup brown sugar
  • 1/2 tsp baking powder
  • 1/2 cup melted salted butter
  • 1 large egg
  • 1 tsp vanilla
For the cheesecake filling
  • 1 block softened cream cheese (250g) Use room temperature for smooth texture.
  • 1 tsp vanilla
  • 1/4 cup powdered sugar
  • 1 large egg
For the strawberry mixture
  • 2 cups chopped strawberries
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1/4 cup white sugar
  • 1 tbsp cornstarch

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Mix together the flour, brown sugar, and baking powder. Add in the melted butter, egg, and vanilla. Mix with a crumbling motion.
  3. Beat together the cream cheese, vanilla, powdered sugar, and egg with a hand mixer until smooth.
  4. Combine diced strawberries, lemon juice, lemon zest, white sugar, and cornstarch in a bowl.
Layering and Baking
  1. Press half of the crumb mixture into an 8x8 pan lined with parchment paper.
  2. Spread on the cheesecake filling, followed by the strawberry mixture, and top with the remaining crumb mixture.
  3. Bake for 40-45 minutes, until golden brown. Let sit for at least 30 minutes to set, then serve.

Notes

Serve chilled for best flavor. Drizzle with melted chocolate or sprinkle with powdered sugar for extra flair. Store in the fridge for 3-5 days or freeze for up to 3 months.
