Ingredients
  

Crust
  • 1 cup graham cracker crumbs Can be gluten-free.
  • 4 tablespoons unsalted butter, melted
Cheesecake Filling
  • 8 oz cream cheese, softened Low-fat or dairy-free options are available.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream Coconut cream can be used for a vegan option.
Topping
  • 1 cup fresh strawberries, sliced Other berries can be substituted.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the graham cracker crumbs with melted butter until combined.
  3. Press the mixture into the bottom of a muffin tin to form the crust.
  4. Bake for 5-7 minutes until golden. Allow to cool.
Cheesecake Filling
  1. In another bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
  2. Fold in the whipped cream until fully incorporated.
Assembly
  1. Spoon the cheesecake mixture over the cooled graham cracker crust in the muffin tin.
  2. Top each bite with sliced strawberries.
  3. Chill in the refrigerator for at least 2 hours before serving.

Notes

Consider drizzling chocolate syrup or caramel over the top for added sweetness. Can be stored in an airtight container in the fridge for up to 3 days.
