- Heat olive oil in a medium skillet over medium-high heat.
- Season chicken breasts with a sprinkle of salt and place them in the pan, cooking for 4-5 minutes on one side until golden brown.
- Flip and cook for another 4-5 minutes until fully cooked through.
- In a small bowl, whisk together strawberry jam, balsamic vinegar, and water.
- Pour the mixture over the chicken when nearly done, scraping up brown bits from the bottom of the pan.
- Reduce heat and simmer for 2-3 minutes until sauce slightly thickens.
- Stir in most of the basil and simmer for another minute.
- Remove chicken from the pan, pour sauce over, sprinkle with goat cheese if desired, and garnish with remaining basil and sliced strawberries.
Notes
For best results, use fresh, in-season strawberries. This dish pairs well with rice or a green salad.
