  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts boneless, skinless chicken breasts About 6-8 ounces each
  • ½ teaspoon sea salt To taste
  • ¼ cup strawberry jam Preferably homemade or high-quality
  • 1 tablespoon balsamic vinegar Adds a tangy depth of flavor
  • 1 tablespoon water Extra if the mixture is too thick
  • ¼ cup fresh basil leaves Cut into ribbons or finely chopped
  • 2 tablespoons crumbled goat cheese Optional topping
  • ¼ cup fresh strawberries Sliced, optional for garnishing

Method
 

Cooking
  1. Heat olive oil in a medium skillet over medium-high heat.
  2. Season chicken breasts with a sprinkle of salt and place them in the pan, cooking for 4-5 minutes on one side until golden brown.
  3. Flip and cook for another 4-5 minutes until fully cooked through.
  4. In a small bowl, whisk together strawberry jam, balsamic vinegar, and water.
  5. Pour the mixture over the chicken when nearly done, scraping up brown bits from the bottom of the pan.
  6. Reduce heat and simmer for 2-3 minutes until sauce slightly thickens.
  7. Stir in most of the basil and simmer for another minute.
  8. Remove chicken from the pan, pour sauce over, sprinkle with goat cheese if desired, and garnish with remaining basil and sliced strawberries.

Notes

For best results, use fresh, in-season strawberries. This dish pairs well with rice or a green salad.
