Ingredients
  

For the crust
  • 1.5 cups all-purpose flour
  • 0.5 cups unsalted butter (cold and diced) Use cold for a flakier crust.
  • 0.25 cups powdered sugar
  • 0.25 teaspoons salt
  • 1 large egg yolk
For the ganache
  • 0.75 cups heavy cream Heat until just boiling.
  • 8 oz dark chocolate, chopped Use high-quality chocolate for best flavor.
For the topping
  • 2 cups fresh strawberries, sliced Toss with sugar before topping.
  • 1 tablespoon sugar (for strawberries)
  • to taste Mint leaves for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, powdered sugar, and salt until crumbly. Add the egg yolk and mix until a dough forms.
  3. Press the dough into a tart pan and poke holes with a fork. Bake for 15-20 minutes or until golden.
Ganache Preparation
  1. In a saucepan, heat the heavy cream until just boiling. Remove from heat and pour over the chopped chocolate, stirring until smooth.
Assembly
  1. Pour the chocolate ganache into the cooled crust and refrigerate until set, about 2 hours.
  2. Toss sliced strawberries with sugar and let sit for 10 minutes.
  3. Top the set tart with strawberries and garnish with mint leaves if desired.

Notes

This tart keeps well in the fridge for about 3 days or can be frozen for up to a month (texture may change).
