Ingredients

Main Ingredients
  • 1 lb fresh strawberries Use ripe strawberries for best flavor.
  • ⅓ c sugar Adjust based on sweetness preference.
  • 1 T fresh lemon juice Juice from about half a lemon.
  • 1 pinch salt

Method

Preparation
  1. Wash and dry the strawberries. Remove the stems, cutting them in half for a chunky feel or slicing each into 8 pieces for a saucier compote.
  2. Juice the lemon, ensuring to remove any seeds and pith. Optionally, you can taste and add a little more if desired.
Cooking
  1. Combine all ingredients in a saucepan over medium heat.
  2. Let it simmer for about 15 minutes, stirring often until strawberries break down.
Cooling
  1. Remove from heat and cool. It will thicken further upon cooling. It can be enjoyed warm or cold.

Notes

Store in an airtight container in the fridge for up to a week or freeze for up to 3 months. Microwave or gently reheat on the stovetop when ready to enjoy.
