  • 2 cups cooked rice Use white or brown rice as per preference.
  • 1 lb chicken breast, grilled and sliced Leftover rotisserie chicken can be used.
  • 1 cup sweet corn, grilled or canned Grilled corn adds extra flavor.
  • 1/2 cup red onion, diced
  • 1 medium avocado, sliced Best added just before serving.
  • 1/2 cup cilantro, chopped Fresh cilantro enhances flavor.
  • 1 medium lime Juice of 1 lime adds zest.
  • Salt and pepper to taste
Optional Toppings
  • cheese Cojita cheese recommended.
  • sour cream
  • hot sauce Add for spiciness.

Method
 

Preparation
  1. In a large bowl, combine the cooked rice, grilled chicken, sweet corn, and diced red onion.
  2. Squeeze lime juice over the mixture and season with salt and pepper.
  3. Toss everything together until well combined.
  4. Serve the mixture in bowls topped with avocado slices, cilantro, and any additional toppings of your choice.

Notes

For meal prep, this bowl can be stored in the fridge for about 3–4 days. For longer storage, freeze it for up to a month, but separate the avocado before freezing.
