  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 1/2 teaspoon chili powder (optional) Adjust according to your spice preference.

Preparation
  1. In a large bowl, combine the corn and diced cucumber.
  2. In a separate small bowl, mix the sour cream, mayonnaise, cilantro, lime juice, chili powder (if using), salt, and pepper until well blended.
  3. Pour the dressing over the corn and cucumber mixture and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be stored in the fridge for up to 3 days. Make ahead for best flavors, but expect cucumbers to soften over time.
