Ingredients
Method
Cooking the Meat
- In a skillet, cook ground beef over medium heat until browned. Drain the excess fat.
- Add taco seasoning and water, then simmer for 5 minutes until thickened.
Preparing the Beans
- In a small saucepan, warm the refried beans with 1/4 cup water, stirring until smooth and spreadable.
Crisping the Tortillas
- For the fried method: Heat 2–3 Tbsp oil in a skillet. Fry tortillas one at a time until golden and crisp, about 1–2 minutes per side. Drain on paper towels.
- For a healthier method: Brush or spray tortillas lightly with oil. Bake at 400°F (200°C) for 5–7 minutes per side until crisp.
Assembling the Pizzas
- Place one tortilla on a baking sheet. Spread a layer of beans, then a layer of seasoned meat.
- Top with another tortilla. Spread a spoonful of enchilada/taco sauce over the top.
- Sprinkle with cheese, then add diced tomatoes, green onions, and olives.
Baking
- Bake pizzas at 400°F (200°C) for 8–10 minutes until cheese is melted and bubbly.
Serving
- Slice into quarters like a pizza and serve hot with extra taco sauce or sour cream if desired.
Notes
Store leftovers in the fridge for about 3 days. Reheat in the microwave or oven for a crisp up. Can be made in advance and frozen before baking.
