  • 2 cups Fresh corn kernels Use fresh corn for the best flavor.
  • 1 cup Cherry tomatoes, halved Use ripe cherry tomatoes.
  • 1/4 cup Red onion, diced Diced finely for better distribution.
  • 1 cup Cucumber, diced Peel if desired.
  • 1 lime Lime juice Freshly squeezed for best results.
  • 2 tablespoons Olive oil Extra virgin olive oil recommended.
  • 1/2 teaspoon Salt Adjust to taste.
  • 1/4 teaspoon Pepper Black pepper preferred.
  • 1/4 cup Fresh cilantro, chopped Add just before serving.

Method
 

Preparation
  1. In a large bowl, combine fresh corn kernels, halved cherry tomatoes, diced red onion, and diced cucumber.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper to taste.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Garnish with fresh cilantro.
  5. Serve immediately or chill until ready to serve.

Notes

For enhanced flavor, let the salad sit for 30 minutes before serving. Best enjoyed fresh, but can be stored in the fridge for up to 3 days. If making ahead, hold off on adding cilantro until serving.
