Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, cream the softened butter with the granulated sugar, then add the eggs one at a time, mixing well after each addition. Stir in the cooled coffee and vanilla extract.
- Gradually incorporate the dry ingredients into the wet mixture until fully combined.
Baking
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Frosting and Serving
- For the frosting, mix the powdered sugar, brewed coffee, and butter until smooth.
- Spread the frosting over the cooled loaf cake and serve with tea or coffee.
Notes
Use room temperature ingredients for a fluffier cake. If you want to switch things up, try adding a zest of orange or using nuts or chocolate chips for added texture. Wrap leftovers tightly in plastic wrap for freezing.
