  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened Use room temperature for best results.
  • 1 cup brewed coffee, cooled For moistness.
  • 2 large eggs Should be at room temperature.
  • 1 teaspoon vanilla extract
Frosting Ingredients
  • 1 cup powdered sugar
  • 2 tablespoons brewed coffee
  • 1 tablespoon butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the softened butter with the granulated sugar, then add the eggs one at a time, mixing well after each addition. Stir in the cooled coffee and vanilla extract.
  4. Gradually incorporate the dry ingredients into the wet mixture until fully combined.
Baking
  1. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Frosting and Serving
  1. For the frosting, mix the powdered sugar, brewed coffee, and butter until smooth.
  2. Spread the frosting over the cooled loaf cake and serve with tea or coffee.

Notes

Use room temperature ingredients for a fluffier cake. If you want to switch things up, try adding a zest of orange or using nuts or chocolate chips for added texture. Wrap leftovers tightly in plastic wrap for freezing.
