  • 1 pound shrimp, peeled and deveined
  • 1/2 cup teriyaki sauce
  • 2 cups cooked rice (white or brown)
  • 1 cup mixed vegetables (such as bell peppers, broccoli, and carrots)
  • 2 tablespoons sesame oil
  • 2 pieces green onions, sliced (for garnish)
  • to taste sesame seeds (optional, for garnish)

Method
 

Preparation
  1. In a bowl, marinate the shrimp in teriyaki sauce for at least 15 minutes.
  2. While the shrimp marinates, heat sesame oil in a skillet over medium heat.
Cooking
  1. Add the marinated shrimp to the skillet and cook until they turn pink and are cooked through, about 3-4 minutes.
  2. Stir in mixed vegetables and sauté until tender.
Serving
  1. Serve the shrimp and vegetable mixture over cooked rice.
  2. Garnish with green onions and sesame seeds if desired.

Notes

Store leftovers in separate containers for up to 3-4 days. Reheat in the microwave or on the stovetop until piping hot, adding a splash of water if the shrimp seem dry.
