Ingredients
  

For the Marinade
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
For Garnish
  • Fresh parsley, chopped for garnish

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, garlic, paprika, cayenne pepper, salt, and pepper.
  2. Add the shrimp to the marinade and toss to coat. Let it marinate for 30 minutes.
Grilling
  1. Preheat the grill to medium-high heat.
  2. Thread the shrimp onto skewers.
  3. Grill the shrimp for 2-3 minutes per side until pink and cooked through.
  4. Remove from the grill, garnish with fresh parsley, and serve with fresh vegetables or a crisp salad.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for about a month. Reheat gently in a pan over low heat or on the grill.
