Ingredients

Main Ingredients
  • 1 lb plump shrimp, peeled and deveined
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon red curry paste
  • 1 large egg, beaten
  • Salt and pepper to taste
  • Oil for frying

Method

Preparation
  1. In a large bowl, chop the shrimp roughly. Add breadcrumbs, green onions, garlic, cilantro, red curry paste, beaten egg, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small cakes, about 2 inches in diameter.
Cooking
  1. Heat oil in a frying pan over medium heat. Fry the shrimp cakes for about 3-4 minutes on each side or until golden brown and cooked through.
  2. Remove from the pan and drain on paper towels.
Serving
  1. Serve hot with a zesty dipping sauce.

Notes

Tips: Chill the mixture if too sticky, use fish or chickpeas for variations, and add more red curry paste for spice. Store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
