Pudding Base
  • 1/3 cup chia seeds Main ingredient for pudding texture.
  • 1 cup almond milk Or other milk of choice.
  • 2 tablespoons maple syrup Can substitute with honey for sweetness.
  • 1 tablespoon espresso or strong coffee Must be cooled before use.
  • 1 teaspoon vanilla extract Adds rich flavor.
Layering Ingredients
  • 1/2 cup Greek yogurt Adds creaminess and rich flavor.
  • Cocoa powder For dusting on top.
  • Dark chocolate shavings Optional for garnish.

Method
 

Preparation
  1. In a bowl, combine chia seeds, almond milk, maple syrup, espresso, and vanilla extract. Stir well and let it sit for about 10-15 minutes until the chia seeds swell and the mixture thickens.
  2. Layer the chia pudding with Greek yogurt in serving glasses or bowls.
  3. Repeat the layers until the ingredients are used up, finishing with yogurt on top.
  4. Dust with cocoa powder and add chocolate shavings if desired.
  5. Chill in the refrigerator for at least 1 hour before serving and enjoy!

Notes

This pudding keeps well in the fridge for up to 3-4 days. Not suitable for freezing. Adjust sweetness as desired, and experiment with additional flavors such as cinnamon or cocoa in the mixture.
