- In a bowl, combine chia seeds, almond milk, maple syrup, espresso, and vanilla extract. Stir well and let it sit for about 10-15 minutes until the chia seeds swell and the mixture thickens.
- Layer the chia pudding with Greek yogurt in serving glasses or bowls.
- Repeat the layers until the ingredients are used up, finishing with yogurt on top.
- Dust with cocoa powder and add chocolate shavings if desired.
- Chill in the refrigerator for at least 1 hour before serving and enjoy!
Notes
This pudding keeps well in the fridge for up to 3-4 days. Not suitable for freezing. Adjust sweetness as desired, and experiment with additional flavors such as cinnamon or cocoa in the mixture.
