Ingredients
  

For the cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
For the filling and topping
  • 1 cup dark chocolate mousse
  • 1 cup white chocolate ganache

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla to the dry ingredients and mix until well combined.
  4. Gradually stir in the boiling water until the batter is smooth.
  5. Pour the batter evenly into the prepared cake pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  2. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Assembly
  1. Once cooled, layer the cakes with dark chocolate mousse in between.
  2. Top the assembled cake with white chocolate ganache for a beautiful finish.
  3. Chill in the refrigerator before serving.

Notes

For better results, use room temperature ingredients and chill your mousse before layering. Level the cakes for a neat look and adjust sweetness as needed.
