Ingredients
  

Cake Ingredients
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs Use room temperature for best results
  • 1 cup whole milk Use room temperature for best results
  • 1/2 cup vegetable oil For a lighter texture
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Helps the cocoa bloom for deeper flavor
Frosting Ingredients
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 cup unsweetened cocoa powder (for frosting)
  • 1 cup heavy cream Whip until stiff peaks form
Ganache Ingredients
  • 8 oz semi-sweet chocolate, chopped
  • 1 cup heavy cream Heat until simmering

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, oil, and vanilla extract. Mix until smooth.
  4. Stir in the boiling water until well combined.
  5. Pour the batter evenly into the prepared pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  2. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Frosting & Assembly
  1. For the frosting, beat the cream cheese until smooth. Gradually add the powdered sugar and cocoa powder.
  2. In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  3. To assemble, place one layer of cake on a serving plate, spread with cream cheese frosting, and repeat for the next layer.
Ganache
  1. For the ganache, heat the heavy cream until it begins to simmer. Pour it over the chopped chocolate and let sit for a few minutes.
  2. Stir until smooth and pour over the top layer of the cake.
  3. Chill before serving.

Notes

For optimal results, use room temperature ingredients and allow layers to cool completely before frosting. You can also make the cake vegan by using plant-based ingredients.
