  • 8 oz pasta Short shapes like fusilli or penne work best
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 cup olives, sliced
  • 1 cup feta cheese, crumbled Can substitute with goat cheese or omit
  • 1/4 cup red onion, diced
  • 1/2 cup Italian dressing Use high-quality dressing for best flavor
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the pasta according to the package instructions. Drain and let it cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, olives, feta cheese, and red onion.
  3. Pour the Italian dressing over the salad and toss to combine.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

Leftovers can be stored in the fridge for 3-5 days in an airtight container. Keep the dressing separate until ready to eat to maintain crunch.
