Ingredients
  

For the crust and topping
  • 1 cup rolled oats Can be toasted for extra crunch.
  • 1/2 cup almond flour Can substitute with oat flour or whole wheat flour.
  • 1/4 cup coconut oil or vegan butter, melted
  • 1/4 cup maple syrup or agave nectar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 pinch salt
For the filling
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries) Frozen berries can be used; make sure to thaw and drain them.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a bowl, mix together the oats, almond flour, melted coconut oil, maple syrup, vanilla extract, cinnamon, and salt until everything’s well combined.
  3. Press about two-thirds of the mixture into the bottom of your prepared baking dish to form a crust.
  4. Layer the fresh berries on top of the crust.
  5. Sprinkle the remaining oat mixture over the berries evenly.
Baking
  1. Bake for 25-30 minutes or until the top is golden brown.
  2. Allow to cool for a few minutes before cutting into bars.

Notes

Store these bars in the fridge for about 5 days or freeze for up to 3 months. To enjoy, warm them in the oven for a few minutes.
