Ingredients

Main ingredients
  • 4 large carrots, chopped

  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can coconut milk
  • Salt and pepper to taste
  • Olive oil

Method

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until soft.

  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce the heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  6. Once cooked, use an immersion blender to puree the soup until smooth. (Alternatively, transfer in batches to a blender.)
  7. Stir in the coconut milk and season with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

Pro Tip: Don’t skip toasting the garlic—it makes all the difference! This soup is perfect for make-ahead meals. Store in the fridge for about 4-5 days or freeze portions for up to 3 months.
