Ingredients
  

Filling
  • 1 cup cashews (soaked) Soak the cashews for creaminess
  • 2 cups cooked spinach You can also use kale
  • 1/4 cup nutritional yeast For a cheesy flavor
  • 2 tablespoons lemon juice Freshly squeezed for best flavor
  • 1 teaspoon garlic powder Adjust to taste
  • to taste Salt and pepper
Assembly
  • 2 cups marinara sauce Use your favorite brand or homemade
  • to taste Fresh basil For garnish
  • as needed Large pasta shells Cooked according to package instructions

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a blender, combine soaked cashews, cooked spinach, nutritional yeast, lemon juice, garlic powder, salt, and pepper until creamy.
  3. Stuff each pasta shell with the cashew mixture.
Assembly
  1. Spread half of the marinara sauce in a baking dish.
  2. Place the stuffed shells in the dish and cover with the remaining sauce.
  3. Bake for 25-30 minutes until heated through.
  4. Garnish with fresh basil before serving.

Notes

Enjoy these stuffed shells hot! They're great with garlic bread or a green salad. Make ahead of time by prepping the filling and shells the day before.
