Ingredients

Meat
  • 1 lb beef stew meat, cut into chunks
Vegetables
  • 2 cups carrots, chopped
  • 1 cup celery, chopped
  • 1 cup potatoes, diced
  • 1 cup green beans, cut into pieces
  • 1 onion chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
Liquids and Broth
  • 4 cups beef broth
Herbs and Seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
Fats
  • 2 tablespoons olive oil

Method

Cooking
  1. In a large pot, heat olive oil over medium heat. Add the beef chunks and brown on all sides.
  2. Stir in the onion and garlic, and cook until the onion is translucent.
  3. Add the carrots, celery, potatoes, green beans, diced tomatoes, beef broth, thyme, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and let it simmer for 1-2 hours, until the beef is tender and the vegetables are cooked through.
  5. Taste and adjust seasoning if necessary. Serve hot.

Notes

Let it simmer for the full 1-2 hours for tender beef and a flavor-packed broth. For a heartier texture, mash a few potato cubes against the pot’s side before serving. If you're looking for variations, try adding lentils for a vegan version or Worcestershire sauce for added depth.
