Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp matcha powder
Wet Ingredients
  • 1/2 cup buttermilk Don't skip for tenderness.
  • 1/4 cup vegetable oil
  • 1 large egg Can substitute with flax egg for a vegan version.
  • 1 tsp vanilla extract
Mix-Ins
  • 1/2 cup white chocolate chips Can substitute with dark or milk chocolate.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and matcha powder.
  3. In another bowl, combine the buttermilk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the white chocolate chips.
  5. Divide the batter evenly among the muffin cups.
Baking
  1. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool before serving.

Notes

Serve these muffins warm drizzled with melted white chocolate or sprinkled with powdered sugar. Store them at room temperature for 3 days, or refrigerate for up to a week. They freeze beautifully and can be reheated when needed.
